When life gives you Basil ? make PESTO!
Better yet make Pesto Salmon, or pesto chicken, pesto pizza, pesto pasta…..AND I’m slightly obsessed with pesto probably because I love the color green, its super simple to make and packs a punch of flavor, plus pesto is full of healthy fats.
When I meal prep salmon, I always have a glaze or sauce component. This not only adds flavor but also keeps the fish tender during reheating.
Pesto is made up of only 5 ingredients: basil, olive oil, garlic, Parmesan and pine nuts. I only had walnuts in my pantry so I used those and it turned out great! Feel free to experiment and swap pine nuts for any toasted nut.
I baked the salmon at 400 F for 10 minutes, roasted fingerling potatoes + orange cauliflower with avocado oil, salt and pepper @ 400 F for 25 minutes. Then top everything with Basil Pesto recipe CLICK HERE
