Southwestern Grilled Stuffed Avocado

Yield: 2-4 servings
2 avocado, cut in half, peeled + pit removed
1 lime, cut in half
1 cup pico de gallo (or salsa)
¼ cup crumbled feta cheese
salt and pepper, to taste
- Squeeze lime juice over avocado halves to prevent from browning. Brush with avocado oil.
- Preheat grill to 450 F. Once grill is hot, place avocado, flesh side down. Grill for 4-5 minutes until grill marks form and slightly charred.
- Remove from grill and stuff the center of each avocado half with prepared pico de gallo. Top with feta cheese and season with salt and pepper. Serve immediately.
**Brush grill with avocado oil to prevent sticking**
