Ginger Lime Dressing + Cabbage Kale Slaw

Cabbage Kale Slaw with Ginger Lime Dressing, Hemp Seeds, Pepitas + Ancient Grains ?

I love this #cruciferous mix of purple + green cabbage with carrots and kale which is super easy to #mealprep for the week! Plus, #completeprotein from #hemp and #pumpkinseeds make this a #plantstrong meal!

Ginger Lime Dressing
? 1/4 cup apple cider vinegar
?1/4 cup lime juice
?1 teaspoon lime zest
?1 tablespoon Dijon Mustard
?2 tablespoons honey
?2 tablespoons grated ginger
?1/2 cup avocado oil
?salt and pepper, to taste
??whisk all ingredients together except for oil. Once combined, slowly whisk in oil until completely combined. Keep refrigerated for up to one week!

Cabbage Kale Slaw

1 bunch kale, stems removed + thinly sliced

2 cups shredded green cabbage

2 cups shredded purple cabbage

1 cup grated carrots

2 cups cooked quinoa

1/4 cup hemp seeds

1/4 cup pepitas (pumpkin seeds)

  1.  Mix all ingredients for cabbage slaw in a large bowl or container.  For meal prepping keep slaw separate from dressing.  Serve when ready to eat!
