Salmon Nicoise Salad on the menu this week!  This dish is super easy for meal prep.  No recipe needed!

Baked Sockeye salmon: Broil for 8 minutes until fish flakes
✔️Hard boiled eggs : Buy organic hard-boiled eggs from Costco
✔️Blanched green beans : Boil water add beans and cook for 2 minutes, drain
✔️Boiled potatoes :  Boil water add whole baby potatoes and salt.  Boil for 10 minutes or until tender with fork
✔️Raw baby spinach : Fresh, prewashed organic spinach
✔️Lemon vinaigrette : 3 Tablespoons olive oil, juice + zest of 1 lemon, 1 teaspoon dijon, 1 teaspoon honey
