Grilled Fruit Salad

Prep Time: 10 minutes

Cook Time: 10 minutes

Yield:  4 servings

 

Ingredients

4 large pieces of pineapple, (about ¼ pineapple)

4 large pieces of watermelon, (about ¼ watermelon)

2 peaches, cut in half and pit removed

Avocado oil

¼ cup mascarpone cheese

drizzle of honey

zest of 1 lime

4-5 basil leaves, finely sliced

 

Preparation

  1. Lightly oil each piece of fruit.
  2. Preheat grill to 450 F.  Once grill is hot, add fruit and grill on each side for 3-4 minutes, covering grill.
  3. Remove from grill and allow to cool.  Then cut fruit into smaller pieces.
  4. Serve with mascarpone cheese, with a drizzle of honey.  Zest fresh lime over fruit and garnish with fresh basil.

 

**Brush grill with avocado oil to prevent sticking**
