Southwestern Grilled Stuffed Avocado

Prep Time: 5 minutes

Cook Time: 5 minutes

Yield:  2-4 servings

 

Ingredients

2 avocado, cut in half, peeled + pit removed

1 lime, cut in half

Avocado oil

1 cup pico de gallo (or salsa)

¼ cup crumbled feta cheese

salt and pepper, to taste

 

Preparation

  1. Squeeze lime juice over avocado halves to prevent from browning.  Brush with avocado oil.
  2. Preheat grill to 450 F.  Once grill is hot, place avocado, flesh side down.  Grill for 4-5 minutes until grill marks form and slightly charred.
  3. Remove from grill and stuff the center of each avocado half with prepared pico de gallo.  Top with feta cheese and season with salt and pepper.  Serve immediately.

 

**Brush grill with avocado oil to prevent sticking**
