Cabbage Kale Slaw with Ginger Lime Dressing, Hemp Seeds, Pepitas + Ancient Grains 💥

I love this #cruciferous mix of purple + green cabbage with carrots and kale which is super easy to #mealprep for the week! Plus, #completeprotein from #hemp and #pumpkinseeds make this a #plantstrong meal!

Ginger Lime Dressing
🍴 1/4 cup apple cider vinegar
🍴1/4 cup lime juice
🍴1 teaspoon lime zest
🍴1 tablespoon Dijon Mustard
🍴2 tablespoons honey
🍴2 tablespoons grated ginger
🍴1/2 cup avocado oil
🍴salt and pepper, to taste
👉👉whisk all ingredients together except for oil. Once combined, slowly whisk in oil until completely combined. Keep refrigerated for up to one week!

Cabbage Kale Slaw

1 bunch kale, stems removed + thinly sliced

2 cups shredded green cabbage

2 cups shredded purple cabbage

1 cup grated carrots

2 cups cooked quinoa

1/4 cup hemp seeds

1/4 cup pepitas (pumpkin seeds)

  1.  Mix all ingredients for cabbage slaw in a large bowl or container.  For meal prepping keep slaw separate from dressing.  Serve when ready to eat!
