Ratatouille brouillade

Egg + Black Bean Breakfast Scramble

Prep Time:  5 minutes

Cook Time: 5 minutes

Yield:  2 servings (Breakfast: Day 3 + Day 6)



1 teaspoon olive oil

1 cup raw spinach

½ cup black beans

2 eggs, beaten

Salt and pepper to taste



  1. Heat olive oil over medium heat in a medium nonstick skillet.
  2. Add spinach and black beans. Saute for 1 minutes until spinach has wilted and cooked down.
  3. Add eggs to pan and cook for 1-2 minutes until cooked. Season with salt and pepper and serve.
